Recipe
Ingredients
2 cups firm green papaya (grated)
1/4 cup fresh green beans (chopped) – optional
1/4 cup carrots (grated)
3 tbsp soy sauce
8-10 cherry tomatoes (sliced in half)
2 cloves garlic (minced)
1 tsp chopped green or red chilies (minced ad more for spicy)
1 tsp lemon or lime juice
1 tsp raw sugar (or 1 tsp honey or
agave nectar) – If you add more green chilies then add more sugar.
1/4 tsp salt
2 tbsp chopped cilantro
3 tbsp roasted peanuts
Method
Mix all above ingredients, except peanuts and toss well.
Mash a little with either hand or with mortar & Pestle. Chill for at least 30 minutes.
Add peanuts just before serving. Enjoy !!!
